The secret to a good cookie...

The secret to making a good cookie is all in how you combine the ingredients. Mostly all cookie recipes will call for first mixing the butter and sugar together. In this step you want to mix them until the color turns lighter, being sure to scrape down the sides of the bowl a few times. Then you add the eggs and mix those together until fluffy. Usually you will mix the dry ingredients in a separate bowl and then add to the wet ingredients. Add the dry stuff in batches, with the mixer on the lowest speed. The glutens are forming now, and you don't want to over mix at this stage.
