Homemade waffles
This recipe produces light and fluffy waffles. The cornmeal gives a extra chewy texture and the buttermilk a slight tartness. You can use regular milk if you don't want to buy buttermilk. I have not tried it with any non-dairy milks so I'm not sure how they would hold up.
cook/prep time: 30 mins
equipment: waffle maker, cooking spray
ingredients:
- 2 cups all purpose flour
- 2 Tbsp yellow cornmeal (opt)
- 2 Tbsp granulated sugar
- 1 tsp baking powder
- 3/4 tsp baking soda
- 3/4 tsp salt (or a pinch if you have coarse salt)
- 2 cups buttermilk or regular milk
- 2 eggs
- 6 Tbsp butter, melted
- 2 tsp vanilla extract (opt)
- maple syrup, for serving
recipe:
- Grab a large bowl and add all the dry ingredients, whisking together.
- Add the eggs. Put the butter in a dish and microwave it for 30 seconds. Check it and microwave for an additional 15 seconds if needed. Add the melted butter to the bowl.
- Add the milk. Stir until combined; do not overstir.
- Spray your waffle maker with cooking spray and add about a cup of batter. Cook per your waffle maker's instructions. Makes about 5 waffles.
