Homemade waffles

This recipe produces light and fluffy waffles. The cornmeal gives a extra chewy texture and the buttermilk a slight tartness. You can use regular milk if you don't want to buy buttermilk. I have not tried it with any non-dairy milks so I'm not sure how they would hold up.

cook/prep time: 30 mins
equipment: waffle maker, cooking spray

ingredients:

  • 2 cups all purpose flour
  • 2 Tbsp yellow cornmeal (opt)
  • 2 Tbsp granulated sugar
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  • 3/4 tsp salt (or a pinch if you have coarse salt)
  • 2 cups buttermilk or regular milk
  • 2 eggs
  • 6 Tbsp butter, melted
  • 2 tsp vanilla extract (opt)
  • maple syrup, for serving

recipe:

  1. Grab a large bowl and add all the dry ingredients, whisking together.
  2. Add the eggs. Put the butter in a dish and microwave it for 30 seconds. Check it and microwave for an additional 15 seconds if needed. Add the melted butter to the bowl.
  3. Add the milk. Stir until combined; do not overstir.
  4. Spray your waffle maker with cooking spray and add about a cup of batter. Cook per your waffle maker's instructions. Makes about 5 waffles.
